Abstract

Wisata gastronomi telah menjadi instrumen vital bagi pembangunan ekonomi daerah; namun, implementasi kebijakan dan standardisasi pembangunan fisik seringkali berbenturan dengan nilai-nilai tradisional setempat. Penelitian ini bertujuan untuk menganalisis strategi adaptasi para pemangku kepentingan wisata gastronomi dalam merespons tekanan kebijakan publik dan modernisasi. Dengan menggunakan metode kualitatif dengan pendekatan penelitian kepustakaan, penelitian ini mengkaji berbagai kasus di Indonesia, seperti Yogyakarta, Palu, dan Manggarai, melalui perspektif teori autentisitas. Hasil penelitian menunjukkan bahwa para pemangku kepentingan beradaptasi melalui tiga dimensi utama: (1) Keaslian Objektif, dengan menjaga kemurnian bahan di tengah peraturan kebersihan yang ketat; (2) Keaslian Konstruktif, dengan membangun narasi dan simbol yang selaras dengan pencitraan kota; dan (3) Keaslian Eksistensial, dengan menciptakan pengalaman partisipatif yang melibatkan wisatawan secara emosional. Kesimpulannya, keberhasilan wisata gastronomi tidak hanya bergantung pada infrastruktur tetapi juga pada keseimbangan antara regulasi pemerintah dan pelestarian identitas lokal untuk memastikan keberlanjutan budaya dan manfaat ekonomi yang adil.
